  • This recipe is a one-pot wonder, making it easy to prepare and clean up, perfect for a busy weeknight dinner.
  • The combination of garlic butter, herbs, and spices creates a depth of flavor that elevates the dish to a whole new level.

Key Ingredients

When it comes to choosing the right ingredients, we recommend opting for high-quality steak and fresh herbs. As for the potatoes, look for ones that are high in starch, such as Russet or Idaho, for a fluffier texture.

Fresh herbs such as parsley and thyme add a bright, freshness to the dish, while garlic butter provides a rich, savory flavor. Don’t be afraid to experiment with different combinations of herbs and spices to create your own unique flavor profile.

Yield:
4 Servings

Ingredients

1.5 lbs flank steak

2 large potatoes, peeled and thinly sliced

4 cloves garlic, minced

2 tbsp unsalted butter

1 tsp dried thyme

Salt and pepper to taste

Fresh parsley, chopped (optional)

Directions

1
Preheat your oven to 400°F (200°C). Season the steak with salt, pepper, and thyme. Heat a large oven-safe skillet over medium-high heat. Add the steak and sear for 2-3 minutes per side, or until a nice crust forms. Transfer the skillet to the preheated oven and cook for 10-12 minutes, or until the steak reaches your desired level of doneness.

2
While the steak is cooking, prepare the potatoes. In a large bowl, toss the sliced potatoes with a drizzle of olive oil, salt, and pepper until they’re evenly coated. Spread the potatoes out in a single layer on a baking sheet and roast in the oven for 20-25 minutes, or until they’re tender and golden brown.

3
In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes, or until fragrant. Stir in the chopped parsley, if using. Remove the saucepan from the heat and set aside.

4
To assemble the dish, slice the cooked steak against the grain into thin strips. Add the sliced steak to the skillet with the garlic butter sauce. Toss the potatoes with the sauce and steak, making sure everything is well coated.

5
Serve the Healthy Garlic Butter Steak And Potatoes Skillet hot, garnished with additional parsley if desired. Enjoy!

Storage & Reheating

To store leftovers, allow the dish to cool completely before refrigerating or freezing. Reheat the steak and potatoes in the oven or on the stovetop, adding a splash of olive oil if needed to prevent drying out. You can also reheat the garlic butter sauce separately and toss it with the steak and potatoes before serving.
