Yield:
4 Servings

Ingredients

1 pound boneless, skinless chicken breast, cut into small pieces

1/2 cup reduced-fat ranch dressing

1 cup shredded reduced-fat cheddar cheese

1/2 cup shredded Monterey Jack cheese

1 large onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

4 large flour tortillas

Directions

1
In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute, stirring constantly to prevent burning.

2
Add the chicken breast pieces to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside to cool.

3
In a large bowl, combine the cooked chicken, reduced-fat ranch dressing, shredded cheddar cheese, and shredded Monterey Jack cheese. Mix until the cheese is well coated with the ranch dressing and the chicken is fully incorporated.

4
Place a large flour tortilla in the skillet and sprinkle a quarter of the chicken and cheese mixture onto half of the tortilla. Fold the tortilla in half to enclose the filling. Cook for 2-3 minutes on each side, until the tortilla is crispy and the cheese is melted. Repeat with the remaining tortillas and filling.

5
Cut the quesadillas into wedges and serve hot with your favorite toppings, such as sour cream, salsa, and diced tomatoes.

Storage & Reheating

To store leftovers, allow the quesadillas to cool completely before wrapping them tightly in plastic wrap or aluminum foil. Refrigerate for up to 3 days or freeze for up to 2 months. To reheat, place the quesadilla in the microwave for 20-30 seconds or in the oven at 350°F (175°C) for 5-7 minutes, until crispy and heated through.
