1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces

2 cups mixed mushrooms (such as cremini, shiitake, and button), sliced

1 small onion, chopped

2 cloves garlic, minced

1 cup low-sodium chicken broth

1/2 cup heavy cream

1 teaspoon dried thyme
