Yield:
4 Servings

Ingredients

4 boneless, skinless chicken breasts

2 cups mixed mushrooms (button, cremini, shiitake), sliced

2 tablespoons butter

1 onion, sliced

2 cloves garlic, minced

1 cup chicken broth

1/2 cup heavy cream

2 tablespoons all-purpose flour

Salt and pepper, to taste

Directions

1
Season the chicken breasts with salt and pepper. Heat the butter in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides and cooked through, about 5-6 minutes per side. Transfer the chicken to a plate and set aside.

2
Reduce the heat to medium and add the sliced onion to the skillet. Cook, stirring occasionally, until the onion is softened and caramelized, about 8-10 minutes.

3
Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they release their moisture and start to brown, about 5 minutes.

4
Add the garlic, chicken broth, and heavy cream to the skillet. Stir to combine and bring the mixture to a simmer.

5
Return the chicken to the skillet and spoon some of the sauce over the top of each breast. Simmer, uncovered, until the sauce has thickened and the chicken is coated, about 5-7 minutes.

Storage & Reheating

Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days. Reheat the chicken in the sauce over low heat, adding a splash of chicken broth or cream if the sauce has thickened too much. Serve hot and enjoy!
