Ingredients

1.5-2 pounds ribeye or strip loin steak, preferably at room temperature

4-5 medium-sized Russet or Yukon Gold potatoes, peeled and cut into 1-inch wedges

6 cloves of garlic, minced

2 tablespoons unsalted butter, softened

2 sprigs of fresh thyme, chopped

1 sprig of fresh rosemary, chopped

Salt and pepper to taste

1 tablespoon olive oil

Directions

1
Preheat your oven to 400°F (200°C). Rinse the potatoes and cut them into 1-inch wedges. Place the potatoes on a baking sheet lined with parchment paper, drizzle with olive oil, and sprinkle with salt and pepper. Roast in the oven for 20-25 minutes, or until they’re golden brown and crispy.

2
While the potatoes are roasting, prepare the garlic butter by mixing the softened butter, minced garlic, chopped thyme, and chopped rosemary in a small bowl.

3
Heat a large oven-safe skillet over medium-high heat. Add the steak and sear for 2-3 minutes per side, or until a nice crust forms. Transfer the skillet to the oven and cook for an additional 8-12 minutes, or until the steak reaches your desired level of doneness.

4
Remove the skillet from the oven and let the steak rest for 5 minutes. Add the garlic butter to the skillet and let it melt, scraping up any browned bits from the bottom of the pan.

5
Slice the steak against the grain and serve with the roasted potatoes and garlic butter sauce spooned over the top.

Storage & Reheating

To store leftovers, let the steak and potatoes cool completely, then refrigerate or freeze for up to 3 days. Reheat in the oven or on the stovetop until warmed through. You can also store the garlic butter sauce separately in an airtight container in the fridge for up to 1 week.
