Ingredients

1 kg boneless, skinless chicken breast or thighs cut into 1 1/2-inch pieces

2 cloves of garlic, minced

1/2 cup freshly squeezed lemon juice

1/4 cup olive oil

2 tsp dried oregano

Salt and pepper, to taste

1 cup mixed greens

1 cup cherry tomatoes, halved

Preheat the oven to 400°F (200°C). In a large bowl, whisk together lemon juice, garlic, olive oil, dried oregano, salt, and pepper.

Add the chicken to the marinade and mix well to coat. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes or up to 2 hours.
