The moment the Healthy Korean BBQ Meatballs With Spicy Mayo hit the grill, the aroma of sweet and spicy Korean chili flakes (gochugaru) fills the air, teasing the senses and building anticipation. The first bite is a flavor explosion – the tender meatballs, infused with the savory flavor of soy sauce and the subtle sweetness of brown sugar, are perfectly balanced by the creamy, spicy kick of the mayo.

There’s a reason why Korean BBQ is a staple of Korean cuisine – the combination of sweet, spicy, and savory flavors is a match made in heaven. And when you pair it with the convenience of meatballs, you get a dish that’s both easy to make and impressive to serve. Just like our Spicy Cajun Potato Soup, this recipe is perfect for a quick weeknight dinner or a special occasion.

Why This Recipe Works

  • The use of Korean chili flakes (gochugaru) adds a depth of heat and flavor that’s hard to replicate with other ingredients.
  • By using a combination of beef and pork, we achieve a tender and juicy texture that’s perfect for meatballs.
  • The spicy mayo adds a creamy and cooling element to the dish, balancing out the heat from the gochugaru.

Key Ingredients

When it comes to Korean BBQ, the quality of the ingredients is paramount. Look for fresh and high-quality ingredients, such as grass-fed beef and pasture-raised pork. For more information on how to choose the best ingredients for your Korean BBQ, check out this guide.

In addition to the meat, the Korean chili flakes (gochugaru) and soy sauce are essential components of this dish. Look for a high-quality gochugaru that’s freshly ground and has a vibrant red color. For the soy sauce, choose a low-sodium option to avoid over-salting the dish.

Ingredients

1 pound grass-fed beef

1/2 pound pasture-raised pork

2 tablespoons Korean chili flakes (gochugaru)

2 tablespoons soy sauce

2 tablespoons brown sugar

2 cloves garlic, minced

1 egg

1/4 cup panko breadcrumbs

Directions

1
Preheat the grill to medium-high heat. In a large bowl, combine the beef, pork, Korean chili flakes, soy sauce, brown sugar, garlic, egg, and panko breadcrumbs. Mix everything together with your hands until just combined.

2
Use your hands to shape the mixture into meatballs, about 1 1/2 inches in diameter. You should end up with around 20-25 meatballs.

3
Place the meatballs on the grill and cook for 5-7 minutes per side, or until they’re cooked through and slightly charred.

4
While the meatballs are cooking, mix together the spicy mayo ingredients in a small bowl.

5
Once the meatballs are done, serve them with the spicy mayo and enjoy!

Storage & Reheating

Store leftover meatballs in an airtight container in the fridge for up to 3 days. Reheat them in the oven at 350°F (180°C) for 10-15 minutes, or until heated through. You can also reheat them on the grill or in a pan on the stovetop.
