Ingredients

1 1/2 pounds boneless, skinless chicken breasts, cut into 4 equal pieces

1 cup whole wheat breadcrumbs

1/2 cup grated parmesan cheese

1/4 cup chopped fresh parsley

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

2 lemons, cut into wedges (optional)

Directions

1
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil, and spray with cooking spray.

2
In a shallow dish, mix together the breadcrumbs, parmesan cheese, parsley, garlic, salt, and pepper.

3
Dip each piece of chicken into the breadcrumb mixture, pressing gently to adhere. Place the coated chicken on the prepared baking sheet.

4
Drizzle the tops of the chicken with olive oil, then squeeze a sliver of lemon juice over each piece (if using).

5
Bake for 25-30 minutes, or until the chicken is cooked through and the crust is golden brown. Serve hot and enjoy!

Storage & Reheating

Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes, or until warmed through. You can also reheat in the microwave, but be careful not to overcook the chicken.
