Ingredients

1 pound of boneless, skinless chicken breast

3 cups of chicken broth

2 carrots, peeled and chopped

1 large onion, chopped

2 cloves of garlic, minced

1 teaspoon of dried thyme

Salt and pepper to taste

4 slices of whole wheat bread, for serving (optional)

Directions

Preheat the oven to 375°F (190°C).

In a large bowl, toss the chopped carrots and onion with 2 tablespoons of olive oil, salt, and pepper until they are evenly coated. Spread them out in a single layer on a baking sheet and roast in the preheated oven for 20-25 minutes, or until they are tender and lightly browned.

In a large pot, sauté the minced garlic in 1 tablespoon of olive oil over medium heat for 1-2 minutes, or until fragrant.
