Yield:
4 Servings

Ingredients

1 lb lean sausage, casings removed

1 large onion, diced

2 cups pre-shredded hash browns

1 cup grated cheddar cheese

1/2 cup grated parmesan cheese

1 tsp dried thyme

Salt and pepper to taste

2 large eggs, beaten

1/4 cup chopped fresh parsley

Directions

1
Preheat the oven to 375°F (190°C). In a large skillet, cook the sausage over medium-high heat, breaking it up with a spoon as it cooks, until no longer pink, about 5-7 minutes. Drain the sausage on paper towels.

2
In the same skillet, add the diced onion and cook until translucent, about 5 minutes. Add the hash browns and cook, stirring occasionally, until they start to brown, about 10 minutes.

3
In a large bowl, whisk together the eggs, thyme, salt, and pepper. Stir in the cooked sausage, hash brown mixture, cheddar cheese, and parmesan cheese.

4
Pour the egg mixture into a 9×13-inch baking dish and bake for 25-30 minutes, or until the eggs are set and the cheese is melted and golden brown.

5
Remove the casserole from the oven and sprinkle with chopped parsley. Let it cool for a few minutes before slicing and serving.

Storage & Reheating

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat the casserole in the oven at 350°F (180°C) for about 10-15 minutes, or until warmed through.
