Yield:
4 Servings

Ingredients

4 boneless, skinless chicken breasts

2 tbsp olive oil

1 tsp dried thyme

1 tsp garlic powder

Salt and pepper to taste

1 large onion, sliced

2 large carrots, peeled and sliced

2 large potatoes, peeled and sliced

Directions

1
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil.

2
In a large bowl, whisk together the olive oil, thyme, garlic powder, salt, and pepper. Add the sliced onion, carrots, and potatoes, and toss to coat.

3
Arrange the vegetables in a single layer on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes, or until tender and lightly browned.

4
While the vegetables are roasting, prepare the chicken. Season both sides of the chicken breasts with salt and pepper.

5
Remove the vegetables from the oven and arrange the chicken breasts on top. Return to the oven and roast for an additional 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

Storage & Reheating

To store leftovers, allow the chicken and vegetables to cool completely, then refrigerate or freeze in airtight containers. To reheat, simply microwave or oven-heat until warmed through.
