  • 0.5 cup creamy peanut butter
  • 0.5 cup Greek yogurt (plain or vanilla)
  • 0.5 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour (or oat flour)
  • 0.5 tsp baking soda
  • 0.25 tsp salt

Instructions
 

  • Preheat oven to 375°F. Line baking sheets with parchment.
  • Cream peanut butter and brown sugar. Beat in egg, yogurt, and vanilla.
  • Stir in flour, baking soda, and salt until combined.
  • Scoop onto sheet and flatten with a fork.
  • Bake 9-11 mins until edges are golden but centers soft.
