- 1 lb lean ground beef (90/10)
- 12 oz whole wheat pasta shells
- 1 small onion, diced
- 2 cloves garlic, minced
- 15 oz tomato sauce
- 2 tbsp tomato paste
- 0.5 cup plain Greek yogurt (or light cream cheese)
- 2 cups fresh spinach
Cook whole wheat pasta according to package directions. Drain.
Brown ground beef and onion in a skillet. Drain fat. Add garlic and seasonings.
Stir in tomato paste and sauce. Simmer for 5-10 minutes.
Remove from heat/reduce to low. Stir in yogurt and spinach until wilted.
Toss with cooked pasta and serve.
