Ingredients
  

  • 1 lb lean ground beef (90/10)
  • 12 oz whole wheat pasta shells
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 15 oz tomato sauce
  • 2 tbsp tomato paste
  • 0.5 cup plain Greek yogurt (or light cream cheese)
  • 2 cups fresh spinach

Instructions
 

  • Cook whole wheat pasta according to package directions. Drain.
  • Brown ground beef and onion in a skillet. Drain fat. Add garlic and seasonings.
  • Stir in tomato paste and sauce. Simmer for 5-10 minutes.
  • Remove from heat/reduce to low. Stir in yogurt and spinach until wilted.
  • Toss with cooked pasta and serve.
