Ingredients
  

  • 1 lb ground beef (lean)
  • 2 large sweet potatoes, peeled and cubed
  • 1 can (15oz) black beans, rinsed
  • 1 cup corn kernels
  • 1 packet taco seasoning
  • 1 cup cheddar cheese, shredded
  • 0.25 cup sour cream

Instructions
 

  • Boil sweet potatoes until tender. Drain and mash.
  • Brown beef and onion. Stir in taco seasoning, beans, corn, and sour cream.
  • Spread meat mixture in baking dish. Top with mashed sweet potatoes.
  • Top with cheese. Bake at 375°F for 25 minutes.
