- 1 lb lean ground turkey
- 1 medium butternut squash, peeled and cubed
- 1 tbsp olive oil
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 3 cups fresh spinach or kale
- 1 tsp dried sage
- 1/2 tsp dried thyme
- 1/2 cup mozzarella cheese, shredded (optional)
- 1 pinch salt and pepper (to taste)
Preheat oven to 400°F (200°C). Toss butternut squash cubes with 1 tsp olive oil, salt, and pepper.
Spread squash on a baking sheet in a single layer. Roast for 20-25 minutes until tender and caramelized.
While squash roasts, heat remaining olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned.
Add diced onion to the skillet and sauté until soft (about 3-4 minutes). Stir in garlic, sage, and thyme; cook for 1 minute.
Add the roasted squash and fresh spinach to the skillet. Toss gently until spinach is wilted and everything is combined.
Top with mozzarella cheese if using. Cover with a lid for 1-2 minutes to melt the cheese.
