- 2 lbs bone-in chicken thighs or legs
- 1 tablespoon olive oil
- 1 large yellow onion, diced
- 3 medium carrots, sliced
- 3 stalks celery, sliced
- 8 cups water or chicken broth
- 1 teaspoon dried thyme
- 1 package (12 oz) wide egg noodles
- 0.25 cup fresh parsley, chopped
Heat oil in a large pot. Season chicken and sear until golden brown. Remove chicken.
Add onion, carrots, and celery to the pot. Sauté for 5 minutes.
Return chicken to pot. Add water/broth, thyme, bay leaf. Bring to boil, reduce heat, and simmer 45-60 mins.
Remove chicken, shred meat, discard bones. Return meat to pot.
Add egg noodles and cook for 6-8 minutes until tender. Stir in parsley and serve.
