Ingredients
  

  • 4 oz flat rice noodles
  • 2 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 2 tbsp palm sugar
  • 1/2 lb shrimp or chicken
  • 2 large eggs
  • 1 cup bean sprouts

Instructions
 

  • Soak noodles in warm water for 30 mins until flexible. Mix sauce ingredients.
  • Sauté protein and garlic in a hot wok. Push to the side and scramble eggs.
  • Add noodles and sauce. Toss vigorously on high heat until noodles are tender.
  • Fold in bean sprouts and chives. Serve with crushed peanuts and lime.
