- 1 lb lean ground beef (90% or leaner)
- 4 medium Russet potatoes, peeled and sliced thin
- 3 medium carrots, peeled and sliced
- 1 large yellow onion, chopped
- 1 cup beef broth (low sodium)
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp garlic powder
- 1 cup cheddar cheese, shredded (optional)
Preheat oven to 375°F. Grease a 9x13 inch baking dish.
In a skillet, brown the ground beef and drain excess fat. Season with salt and pepper.
Layer sliced potatoes in the bottom of the dish. Top with carrots and onions.
Spread browned beef over the vegetables.
Whisk broth, tomato paste, Worcestershire, and spices. Pour over the casserole.
Cover tightly with foil. Bake for 45 minutes.
Remove foil, add cheese (if using), and bake 15 more minutes until potatoes are tender.
