Ingredients
  

  • 1 lb lean ground beef (90% or leaner)
  • 4 medium Russet potatoes, peeled and sliced thin
  • 3 medium carrots, peeled and sliced
  • 1 large yellow onion, chopped
  • 1 cup beef broth (low sodium)
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 cup cheddar cheese, shredded (optional)

Instructions
 

  • Preheat oven to 375°F. Grease a 9x13 inch baking dish.
  • In a skillet, brown the ground beef and drain excess fat. Season with salt and pepper.
  • Layer sliced potatoes in the bottom of the dish. Top with carrots and onions.
  • Spread browned beef over the vegetables.
  • Whisk broth, tomato paste, Worcestershire, and spices. Pour over the casserole.
  • Cover tightly with foil. Bake for 45 minutes.
  • Remove foil, add cheese (if using), and bake 15 more minutes until potatoes are tender.
