Ingredients
  

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 large avocados, pitted and cubed
  • 1/3 cup cilantro, chopped
  • 2 tbsp green onion, sliced
  • 1/3 cup feta cheese, crumbled
  • 1 lime, juiced
  • 1 tbsp olive oil (optional)
  • to taste Salt and black pepper

Instructions
 

  • Open the can of chickpeas, rinse them thoroughly under cold water, and drain well.
  • In a large bowl, combine the cubed avocados, drained chickpeas, cilantro, green onion, and crumbled feta.
  • Squeeze the fresh lime juice over the mixture and drizzle with olive oil if using. Season with salt and pepper.
  • Gently toss everything together until combined. Serve immediately.

Notes

Best served fresh. If storing, press plastic wrap directly onto the surface to prevent the avocado from browning.
