Ingredients
  

  • 1 lb Smoked turkey sausage, sliced
  • 2 lbs Red potatoes, cubed
  • 1 large Onion, diced
  • 1 cup Celery, diced
  • 1 cup Bell pepper, diced
  • 4 cups Chicken broth (low sodium)
  • 1 cup Milk (2% or whole)
  • 1 tbsp Cajun seasoning
  • 1 cup Corn kernels

Instructions
 

  • Sauté sliced turkey sausage in a large pot until browned. Remove.
  • Add onion, celery, and pepper to the pot. Sauté until soft. Add Cajun spice.
  • Add broth and potatoes. Simmer 15-20 mins until tender.
  • Stir in milk and corn. Cook 5 mins to heat through. Add sausage back in.

Notes

To make it even lighter, use half-and-half or milk instead of heavy cream, and thicken with mashed potatoes.
