Ingredients
  

  • 1 tbsp olive oil
  • 1 onion yellow onion, chopped
  • 2 cups carrots and celery, chopped
  • 2 cloves garlic, minced
  • 1/3 cup flour (or GF blend)
  • 4 cups chicken bone broth
  • 2 cups Yukon gold potatoes, cubed
  • 1 lb chicken breast, cubed
  • 1 cup frozen peas
  • 1 cup evaporated milk or coconut milk
  • 2 cups fresh spinach or kale
  • 1 tsp fresh thyme

Instructions
 

  • Heat oil in a pot. Sauté onion, carrots, and celery until soft.
  • Stir in garlic and flour. Cook for 1 minute.
  • Add bone broth, potatoes, and chicken. Simmer covered for 15-20 mins.
  • Stir in peas and milk. Heat through. Stir in spinach to wilt.
  • Season with salt, pepper, and lemon juice. Serve.

Notes

Blend a cup of the soup and stir back in to thicken naturally.
